VINIFICATION:
crushing and destemming, cooling of the crushed grapes, cold maceration in press (3–4 hours at 12°C) followed by gentle pressing. Static cold decantation follows for 24–48 hours at 5°C, alcoholic fermentation and subsequent re-fermentation in autoclave for the prise de mousse, which occurs very slowly (18–22 days)
AGING IN AUTOCLAVE:
at the end of the prise de mousse, the wine remains 5–6 months on the “fine lees” at controlled temperature (13°C) with periodic resuspension of the yeasts (batonnage).
BOTTLE MATURATION:
after bottling, the product matures in a temperature-controlled cellar for a minimum of 3–4 months
STYLE:
A wine of great freshness that enhances the typical character of this historic grape variety both when young and after a few years of aging

pale straw yellow with greenish reflections, fine and persistent perlage
Aroma:
On the nose, it strikes with a pleasant scent of white fruit and citrus, which blends and becomes complex with floral notes, dried nuts, and yeast aromas derived from the long aging in autoclave
Taste:
On the palate, it expresses great freshness and balance in all its soft and fragrant/citrusy components.
Pairings:
Its easy drinkability and soft structure make it very pleasant as an aperitif. Excellent with fish appetizers and a wide selection of seafood dishes.
